Waxy potato starch is a special potato starch with >99% amylopectin starch. This leads to different and unique characteristics when compared to regular potato starch such as higher viscosity, improved salt stability, higher clarity, improved shear and shelf life stability and different texture and expansion properties (for example in snacks and coatings).
